  • Ok so. I legit tried this and fully expected the difference wouldn't be that significant.
I can confirm that I took 2 steps back after my first bite because the difference was extremely noticeable.

  • Mandoline ? It's so simple with a chip maker (coupe-frites). We use them in Belgium.

  • Put them in the fridge after the first blanch and let the mystery come out. They will become nice and golden after second fry.

  • It's just not worth making fries this way at home. Too many negatives, such as the duration, and the need for a lot of oil that you shouldn't really reuse.

    J_ Delay 16/10/2022 pm6:14
  • These are perfect fries… The only problem of course is they take too long to prepare.. it 8s the reason most folks prefer letting the pros do it at their fav restaurant

    daniel lack 16/10/2022 pm6:14
  • I just love Frank, he’s just awesome

    Jamie Knapp 16/10/2022 pm6:14
  • Easier to get an electric fryer. I make fries like McDonald's..

    Cee Tee 16/10/2022 pm6:14
  • That was very interesting to see the tricks and techniques for the 'perfect' home made french fry. But, seriously, that is way too much effort and time for such a simple thing. Who is going to go to all this trouble at home?

    Dionysos 16/10/2022 pm6:14

    pongespob 16/10/2022 pm6:14
  • Doing too much this recipe sucks

    Joseph Kassees 16/10/2022 pm6:14
  • They burned lol

    DMX 16/10/2022 pm6:14
  • Simpler method: put potato sticks in dutch oven, cover with oil. Cook at medium heat until golden brown.

    Blehkelekwet 16/10/2022 pm6:14

Could be much better. First the potatoes must be peeled. Pre-baking is good, but putting them in the fridge for cooling is too much. Just let it cool on the counter for half an hour. Then bake, but not as long as you show, your fries are much too brown. Real fries are golden yellow. I should't know, I'm Flemish.
