The Food Wars Team, Harry Kersh and Joe Avella, make McDonald’s original recipe fries.
We’ve spent weeks tracking down the original McDonald’s fries recipe, recreating everything from the famous Formula 47 to the correct variety of potato, and we wanted to test this recipe against the modern McDonald’s fries you’re used to.

McDonalds’s fries original 1955 recipe:

2 large Idaho russet potatoes
1/4 cup sugar
2 tablespoons corn syrup
formula 47 (6 cups beef tallow, ½ cup canola oil)
salt
Peel the potatoes. In a large mixing bowl, combine sugar, corn syrup, and hot water. Make sure the sugar is dissolved. Cut the peeled potatoes into shoestrings. The potatoes should be 1/4″ x 1/4″ in thickness, and about 4″ to 6″ long.
Place the shoe-stringed potatoes into the bowl of sugar-water, and refrigerate. Let them soak for 30 minutes. While they’re soaking, pack the shortening into the deep fryer.
After it has liquefied and is at least 375°, drain the potatoes and place into the fryer. After 1 1/2 minutes, remove the potatoes and place them on a paper towel lined plate. Let them cool for 8 to 10 minutes in the refrigerator.
After the deep fryer is reheated to 375°-400°, add the potatoes and deep fry again for 5-7 minutes until golden brown. Remove and place in a large bowl. Sprinkle generously with salt, then “toss” the fries to mix the salt evenly.
Depending upon the size of the potatoes, this recipe makes about 2 medium sized fries.

  • Way too long, too many attempts at being funny which is just annoying, didn't see the need to have the American dude there for any reason. He didn't even do the recipe as it was so what is the point? Editing just unnecessarily all over the place. Didn't care for all of the random reaction stuff. Rule number one of filmmaking is show. Don't tell. There's a whole lot of telling in this and not a whole lot of showing. Unfortunate but it feels like 80% of this is filler. Might as well be a shitty 70s backyard horror movie

  • I'm only a few minutes into the video. But you skipped the most important step. That is to measure the specific gravity of the potatoes. If your potatoes contain too much water the fries will become soggy with thin flavor. So you have to measurement it. That is why mcdonald's felt the need to switch to a frozen product, which did not yet exist. So they could control it…

  • Having grew up on the original fries, the new fries are disgusting to me. My family would go to McDonald's, just for the fries sometime. Once they changed them, customer count have significantly decreased imo.

  • Somebody ought to bring those back even if it's not Macdonald's. The reason given for the switch was that saturated fat was considered extremely unhealthy, it was bad science, current thinking is that it's not too high that bad for you. I suspect the real reason was that the industrial product was much cheaper. It's for that reason that they won't bring them back. But it would make sense for one of the so called better burger chains to introduce a tallow fried potato, they can charge a higher price if they have a better fry.
