Perfect Roast Chicken
RECIPE COURTESY OF INA GARTEN
Level: Intermediate
Total: 2 hr 10 min
Prep: 20 min
Inactive: 20 min
Cook: 1 hr 30 min
Yield: 8 servings

Ingredients

1 (5 to 6 pound) roasting chicken
Kosher salt
Freshly ground black pepper
1 large bunch fresh thyme, plus 20 sprigs
1 lemon, halved
1 head garlic, cut in half crosswise
2 tablespoons (1/4 stick) butter, melted
1 large yellow onion, thickly sliced
4 carrots cut into 2-inch chunks
1 bulb of fennel, tops removed, and cut into wedges
Olive oil

Directions

Preheat the oven to 425 degrees F.

Remove the chicken giblets. Rinse the chicken inside and out.

Remove any excess fat and leftover pin feathers and pat the outside dry. Liberally salt and pepper the inside of the chicken.

Stuff the cavity with the bunch of thyme, both halves of lemon, and all the garlic. Brush the outside of the chicken with the butter and sprinkle again with salt and pepper. Tie the legs together with kitchen string and tuck the wing tips under the body of the chicken.

Place the onions, carrots, and fennel in a roasting pan. Toss with salt, pepper, 20 sprigs of thyme, and olive oil. Spread around the bottom of the roasting pan and place the chicken on top.

Roast the chicken for 1 1/2 hours, or until the juices run clear when you cut between a leg and thigh. Remove the chicken and vegetables to a platter and cover with aluminum foil for about 20 minutes. Slice the chicken onto a platter and serve it with the vegetables.

  • I changed this recipe up a bit my bf suggested I switch out the lemon with an apple. The apple gives it a great flavor that the lemon just doesn't. But I knew I need a acid so I used white wine instead. Also a trick my bf taught me is to always put your chicken breast down so the breasts won't dry up. It works like a charm the breasts come out juicy everytime. Also I never truss the chicken not really necessary. I don't eat the roast chicken as a meal it's just me and my bf and I'm not a big fan of chicken like this. I shred up all the meat and portion it out and freeze it to through in something for a quick meal. And then I use the remains for bone broth. I also do all of this in a pressure cooker.

  • No. No lemon. It does not “brighten” flavor. It makes it taste sour. Lemons are sour.

    Paul Solon 17/10/2022 am2:43
  • No. Don’t wash the chicken. Spreads germs

  • This recipe is a keeper! The store was out of fresh thyme so I just used dried. For veggies, I used potatoes and onions (delicious cooked in the juices). I had a big chicken and had to cook 20 minutes longer.

  • Is putting lemons with chicken an american thing, because my late mother never put lemon in roast chicken. I've tried it myself and found the chicken awfully bitter!
