Roasted Chicken Recipe
5 lb Whole chicken
2 Sprigs fresh rosemary
2 Sprigs fresh thyme
1 Onion peeled and quartered
1 Lemon quartered
6 tbsp butter softened
2 tsp minced garlic
2 tsp fresh thyme leaves minced
2 tsp fresh rosemary leaves minced
1 tbsp fresh parsley leaves minced
Salt and Pepper to taste

Preheat the oven to 400 degrees F.
Place the chicken in a roasting pan or a Cast Iron Skillet. Cook for approximately 1 hour and 20 minutes or until a meat thermometer inserted into the thickest part of the thigh reads 165 degrees F.

  • Hey Ab, this is Lycansqueen saying Hello all the way from NY.
    I've been following your videos for at least a year because of my homegirl. Love your videos, however, I'm having an issue. I LOVE making your chicken brine and roasted chicken, but every time I make the chicken, the legs never cook with the rest of the bird. I always have to put it back in the oven for another 30 -40 minutes. I preheat the Oven to 400 like you suggested and I always end up having to cover the breast so it doesn't cook when I put it back in. Help me out, what am I doing wrong?!

  • Mannnn I saw this recipe ( part 1 &2) a month ago and I knew I had to try it for Christmas. Ive always been intimated to make a whole chicken but I followed this recipe and it was a lot easier than I thought and the chicken was a 10/10!! So flavorful and juicy! I put the chicken breast side down in the brine and the only changes are that I also used oregano and all fresh herbs for the butter, put the butter under and above the skin and sprinkled just a tiny bit of salt, pepper and paprika on the skin. The chicken was perfect!! This will be my go to recipe from now on. Thank you!!
