★Ingredients
■Tempura batter
1 tbsp mayo
75ml (0.3 US cup) cold water
40g (1.4oz) cake flour

■Tempura sauce
1/3 tsp dashi powder
1/2 tbsp mirin
1/2 tbsp soy sauce
1 tbsp water

★About seasonings

——Substitute for Mirin and Sake—-
If you can’t find mirin or sake in your city, you can substitute them like this

For 1 tbsp mirin use either:
1 tbsp sake + 1/2 tsp sugar
or
1 tbsp white wine + 1/2 tsp sugar

For 1 tbsp sake use:
1 tbsp mirin
or
1 tbsp white wine

It won’t be exactly the same, but still works

  • Tempura is a versatile preparation. One that tastes great is chopped vegetables like cabbage, carrots, onions and, if you have them, a little small shrimp. Sometimes I like to add a little cornstarch to the dough to make it more crunchy.
    I think it's hard to have bad tempura, even goya should taste good… 😅(but I really like goya, for real). Curious and interesting the history of tempura 😁
